Ingredients:

Meats:
- 1/2 pound large shrimp, cleaned and butterflied
- 1/2 pound beef steak, thinly sliced (New York sirloin recommended)
- 1/2 pound chicken breast, thinly sliced

Egg Mixture:
- 2 large eggs (separate one egg white for shrimp, use the rest for beef and chicken)

Seasonings:
- White pepper and salt to taste (black pepper can be used as a substitute)
- 2 tablespoons cornstarch

Noodles:
- 14 ounces Chinese-style lo mein noodles (or 1 pound linguine noodles)
- Sesame oil

Vegetables:
- 1 teaspoon ginger, minced
- 3 cloves garlic, minced
- 1 onion, sliced
- Carrots, sliced
- Bell peppers, sliced
- 2 cups sugar snap peas
- Green onions (whites and greens separated)

Sauce:
- 1/4 cup oyster sauce
- 1 tablespoon sugar
- 1/2 teaspoon dark soy sauce
Instructions:

Prepare the Meats:
- In separate bowls, add the egg white to the shrimp and the full egg mixture to the beef and chicken.
- Season each with white pepper and salt to taste.
- Add 2 tablespoons of cornstarch to each bowl.
- Mix well and let marinate for at least 15 minutes.

Cook the Noodles:
- Boil the noodles according to the package instructions, reducing the time by about 30 seconds (5 to 5.5 minutes for lo mein noodles).
- Drain and rinse in cold water to stop cooking.
- Toss with a little sesame oil to prevent sticking.

Cook the Meat:
- Preheat a nonstick wok and add a couple tablespoons of vegetable oil.
- Cook the beef, shrimp, and chicken separately in the hot wok until just done, then set aside.

Prepare the Vegetables:
- Add more oil to the wok if needed and sauté the whites of the green onions, ginger, and garlic.
- Add the onions, carrots, and bell peppers, cooking until tender.
- Add the sugar snap peas and cook for an additional minute.
- If desired, add 1/2 cup of water to help cook the sugar snap peas.

Make the Sauce:
- In a small bowl, mix together the oyster sauce, sugar, and dark soy sauce. Adjust to taste.

Combine Everything:
- Return the cooked meats to the wok with the vegetables.
- Add the cooked noodles and sauce, tossing everything together.
- Add more sauce if needed and toss until everything is well coated and heated through.
- Add the green onions and a dash of sesame oil to taste.

Serve:
- Plate the lo mein and serve hot.
